Japanese sake

Sake, also known as Japanese rice wine, is made by fermenting rice. It has been produced in Japan for over 1,000 years. There are various types of sake, including Ginjo-shu (polished rice to less than 60% of its size, known for its fruity aroma), Junmai-shu (made without additives, with a rich flavor), and Honjozo-shu (light-tasting sake with a fixed amount of alcohol from rice and rice malt). Sake can be enjoyed hot or cold, and it’s an integral part of Japanese culture .

Japanese whisky, developed and produced in Japan, began around 1870. The first commercial production started in 1923 with the opening of Yamazaki distillery. Japanese whisky shares similarities with Scotch whisky. Notable brands include Suntory and Nikka, offering blended and single malt whiskies. The style emphasizes craftsmanship and quality, with a focus on smoothness and balance. By 2024, products labeled as “Japanese whisky” must adhere to new regulations, including fermentation, distillation, aging, and bottling in Japan, using malted grain and Japanese water.

Japanese whiskey produced by Venture Whiskey in Chichibu City. The scent has elements of herbs and spices, and you may notice notes of cinnamon and vanilla. It has a good balance of barley and malt, and a mellow and smooth taste. It is popular for its fruity and refreshing taste.

Yamazaki Distillery

Yamazaki 12-year-old whisky, produced at Suntory’s Yamazaki distillery, is a single malt whiskey. It boasts fruity aromas, hints of vanilla, and a rich, well-balanced flavor. Despite its popularity, it remains scarce due to high demand.

YOICHI
Yoichi Distillery

The Yoichi Distillery, located in Yoichi, Hokkaido, is the birthplace of Nikka Whisky. Founded by Masataka Taketsuru, it embodies his vision of an ideal whisky-making location with a climate similar to Scotland. The distillery employs traditional methods, including the unique coal-fired distillation, resulting in robust malt spirits. It’s renowned for its Single Malt Yoichi, characterized by rich aromas and a smoky profile.

Junenmyo Noir
Saburomaru Distillery

Using malt burnt with rare Islay peat, it is distilled in the world's first cast pot still, ZEMON, and is characterized by a rich, smoky flavor. It was named after a place called ``Junenmei'' near Saburomaru Distillery.
